This is waterless and fat less way of cooking.
GAJAR KA ALWA |
Ingredients: ( serve 4 - 5 adults )
1. Carrots - 250g ( 7 - 8 carrots )
2. Milk - 500ml
3. Sugar - 50g ( check for sugar and can be added later if needed )
4. unsalted butter or Ghee - 2tbsp
5. cardamom powder - 1/4 tsp ( 3 - 4 elachi powdered )
6. Roasted cashew nuts and almonds, to garnish
7. Mawa ( khoya ) - 1 cup ( optional ) for additional taste
Method of preparation:
- Scrape the carrots and grate them finely.
2. Pour milk into a heavy based saucepan or a non-stick pan.
3. Add grated carrot and cardamom powder. Bring it to boil.
4. Cook until the carrot have absorbed the milk.
5. Add sugar. Once the mixture becomes dry, add ghee and stir it for another 2 minutes.
6. Transfer to a serving dish, garnish with roasted cashew nuts.
7. Serve hot or you can keep it in the refrigerator and serve
Tips:
1. Stir the mixture in medium heat.
2. You can adjust the quantity of sugar according to your taste.
